Baked Feta Pasta with Harissa
Cooking Time: 40 minutes
Serves 4
What you Need:
- 1 lb dry pasta
- 4 cups cherry tomatoes
- 8 oz block of feta
- 4 cloves garlic
- 1/2 cup olive oil
- 1 pouch Haven's Kitchen Zippy Chili Harissa
- 1/4 cup fresh parsley, roughly chopped
- Salt and pepper, to taste
How to Make It:
- Preheat your oven to 400 degrees
- Place your tomatoes and garlic cloves in a baking dish, add your olive oil and season with salt and pepper. Nestle the block of feta in the center of the dish. Bake for 30 minutes
- Meanwhile cook your pasta according to the package instructions, then drain and reserve, saving 1 cup pasta water
- After the tomatoes and feta have been baking for 30 minutes, remove from oven and drizzle half a pouch of Haven's Kitchen Zippy Chili Harissa on top of tomatoes. Crank oven to 450 and continue baking for another 10 minutes
- Remove from oven and mash the feta with a wooden spoon. Mix the feta with the tomatoes to create a sauce
- Add your cooked pasta and mix until combined. If you find that it's too dry, add some of your reserved pasta water. Check seasoning and add salt and pepper if necessary
- Garnish with the rest of your Haven's Kitchen Zippy Chili Harissa and fresh chopped parsley!
