Salmon with Miso Butter Broccoli

Cooking Time: 25 minutes

Serves 4

 What you Need:

  • 2 cups of rice, uncooked
  • 1 tbsp of oil
  • 4 salmon filets
  • 1 head of broccoli
  • 1 pouch of Haven’s Kitchen Gingery Miso Sauce
  • 1 tbsp of butter
  • 1 lime 

How to make it:

  1. Preheat oven to broil
  2. In a medium sized pot, place dry rice and oil in pot. Toast the rice for about 2 minutes
  3. Follow the cooking instructions for on the rice package
  4. On a baking sheet, place salmon skin side down. Rub with olive oil, and salt. Broil in the oven for 12-14 minutes
  5. While the salmon cooks, in a sauce pan blanch the broccoli in water. Add the miso, and butter. Stir-fry for about 5 minutes
  6. Once rice is finished, stir in Lime zest, and salt
  7. Combine rice, and broccoli, place salmon filets on top with

Anita – you are right, that is a lot of rice. We have updated the recipe to reflect 2 cups of rice to minimize waste and leftovers.

5 cups of raw rice in the salmon recipe ? That will make from 10 – 13 cups of cooked rice – that can’t be right – can it ?-
2 – 3 cups of rice per person?
