Chimichurri Chicken Thighs with Honey & Lime

Serves 4
What You Need:
- 4 bone-in chicken thighs, skin on
- Salt
- Zest and juice of 1 lime
- 2 tbsp honey
- 1 pouch of Haven's Kitchen Herby Chimichurri
- Olive oil
- Cooked white rice, for serving
How to Make it:
- Preheat your oven to 400°F. Lay the chicken out on a sheet pan lined with a rack. Rub chicken all over with salt and set aside
- In a small bowl, combine lime zest, lime juice, honey, and ½ pouch of Herby Chimichurri. Spoon the mixture equally on each thigh and coat them with sauce using the back of a spoon
- Roast for 40 min until chicken temps 165°F
- Serve the chicken by piling cooked white rice on a large platter. Then lay down the chicken. Pour all the juices in the pan over the chicken, scraping up any crispy bits. Drizzle with more Chimichurri and enjoy while hot!
