Chimichurri Roasted Asparagus with Eggs

Serves 4
What you Need:
- 1 bunch asparagus, trimmed of tough bottoms
- 2 Tbsp olive oil
- 4 whole eggs
- 1 pouch Haven's Kitchen Herby Chimichurri
- 1/4 cup shaved parmesan cheese
- Salt and pepper, to taste
How to Make It:
- Preheat oven to 425 degrees Fahrenheit with a baking sheet inside
- Toss asparagus in 1 tablespoon olive oil, 1/3 pouch of Haven's Kitchen Herby Chimichurri, and season with salt and pepper. Place on hot baking sheet and bake for 15-20 minutes flipping halfway, until golden brown
- Meanwhile, fry eggs in remaining olive oil, and season with salt and pepper
- Transfer cooked asparagus to platter and top with fried eggs. Drizzle more Haven's Kitchen Herby Chimichurri, and top with shaved parmesan cheese
Notes
- To shave parmesan use a vegetable peeler to get delicate thin ribbons
