Tomato and Cucumber Mediterranean Salad

Serves 4
What you need:
- 3-5 medium tomatoes (any variety), large diced or halved
- 1 large English cucumber or 6 Persian cucumbers, large quarters
- 1 bunch fresh parsley leaves, chopped
- ¼ pouch Haven’s Kitchen Golden Tahini sauce
- 2 tbsp extra virgin olive oil
- 1/2 lemon, juiced
How to make it:
- In a large salad bowl, add the tomatoes, cucumbers, and parsley. Sprinkle with 1 tsp salt and set aside for about 4 minutes, this allows the juices to be released.
- Add the remaining ingredients and give the salad a gentle toss to coat. Refrigerate until ready to serve.
