Gingery Miso Cabbage & Eggplant
Cooking Time: 30-35 minutes
Serves 4
What you Need:
- 1 small head of cabbage, cut into thick wedges
- 2 small eggplants, cut into large chunks
- 2 Tbsp olive oil
- 1 pouch Haven's Kitchen Gingery Miso
- 2 Tbsp sesame seeds, toasted
- 1/2 cup fresh cilantro, chopped
- Salt and pepper, to taste
How to Make It:
- Preheat your oven to 450 degrees Fahrenheit, with a rack in the middle
- Toss your veggies in olive oil and season with salt and pepper, to taste. Place in single layer on a parchment paper lined baking sheet
- Bake for 20 minutes until bottom of veggies are golden brown. Remove pan from oven and flip veggies over. Drizzle 1/2 a pouch of Haven's Kitchen Gingery Miso dressing on top. Return to oven for an additional 10-15 minutes until veggies are tender and golden
- Place veggies on serving platter and drizzle with remaining Haven's Kitchen Gingery Miso dressing
- Garnish with toasted sesame seeds and chopped fresh cilantro and enjoy!
