Red Pepper Romesco Grilled Cheese

What you Need:

 How to Make It:

  1. Spread mayo on the outsides of your bread
  2. Build your sandwich starting with your bread (mayo on the bottom), Romesco, cheese, herbs, and more Romesco. Top with the other slice of bread, mayo on the top
  3. In a pan over medium-low heat carefully place your sandwiches in and hear them sizzle lightly. Cook for about 3-4 minutes checking to make sure the underside Is getting golden brown but not burned. Once desired color Is achieved, flip over and continue cooking 3-4 on the other side until golden brown
  4. Once done, remove from pan and let rest for 1 minute
  5. Cut In half (so you can watch the cheese ooze), and serve with remaining Romesco for dipping
