Roasted Sweet Potatoes with Tahini Drizzle

Cooking time: 45 minutes

Serves 6

What you need:

  • 3-4 medium sweet potatoes, sliced into ¾-inch disks
  • Olive oil
  • Sea salt
  • 1 pouch of Haven’s Kitchen Golden Turmeric Tahini
  • A handful of parsley, rough chopped
  • ½ cup of pomegranate seeds
  • ½ cup of pistachios, toasted and chopped

How to make It:

  1. Preheat your oven to 425. Line a baking sheet with parchment
  2. Toss the sweet potatoes with the olive oil, and a hefty pinch of salt
  3. Roast the potatoes, in a single layer, for about 30-40 minutes, till tender and golden
  4. Drizzle with Tahini and garnish with parsley, pomegranate seeds, and pistachios
