Roasted Sweet Potatoes with Tahini Drizzle
Cooking time: 45 minutes
Serves 6
What you need:
- 3-4 medium sweet potatoes, sliced into ¾-inch disks
- Olive oil
- Sea salt
- 1 pouch of Haven’s Kitchen Golden Turmeric Tahini
- A handful of parsley, rough chopped
- ½ cup of pomegranate seeds
- ½ cup of pistachios, toasted and chopped
How to make It:
- Preheat your oven to 425. Line a baking sheet with parchment
- Toss the sweet potatoes with the olive oil, and a hefty pinch of salt
- Roast the potatoes, in a single layer, for about 30-40 minutes, till tender and golden
- Drizzle with Tahini and garnish with parsley, pomegranate seeds, and pistachios
