Tangy BBQ Cauliflower Tacos

Cooking Time:  45 minutes

Serves 2

What you Need:

  • 1 head of cauliflower, cut into small, bite-sized pieces (about 6 cups)
  • Olive oil
  • 1 pouch of Haven’s Kitchen Tangy BBQ sauce
  • 4-6 tortillas
  • 1 cup shredded cheese
  • 1 avocado, sliced
  • 1 jalapeño pepper, slicced
  • A small handful of fresh cilantro, leaves only
  • Limes for garnish

How to Make It:

  1. Preheat oven to 425°F. Toss cauliflower with oil and the Tangy BBQ sauce. Bake for 20-30 minutes, tossing once halfway through. When cauliflower is cooked finished, top each tortilla with cheese and book in the oven until the cheese is melted (about 3 minutes)
  2. Assemble tacos by filling the tortillas with BBQ cauliflower, avocado, jalapeno and cilantro
